PCOS Friendly Summer Dinner Recipes

These easy dinner recipes are PCOS-friendly and great for grilling season!

This summer has been soooo hot! And if you are anything like me, the last thing you want to do is cook or put that oven on. So that only leaves one option, grilling! Time to fire up that BBQ!

When I am meal planning for my family, I am always on the hunt for recipe ideas that are healthy, tasty, and easy. Both of these recipes check all of those boxes. SCORE!!!

The recipes I am going to share with you are two recipes that I found scouring the food blogs. The first recipe is yogurt marinated chicken skewers from the blog Little Broken.

What I like about this recipe is that all of the ingredients are easy to come by, in fact, you probably already have most of the ingredients in your home. And you if really want to be lazy or are short on time, like I was, and don't want to cut the chicken into small chunks, you could just marinade the breasts and grill them whole.

 

 

This meal is a fantastic option for women with PCOS because it is low-carb. The chicken offers a nice amount of protein to keep you energized and fueled and the cucumber salad is light and fresh. This meal will fill you up and satisfy you without causing any harm to your blood sugars or waistline. 

This recipe was a huge hit in my house. My husband raved about it and my soon-to-be 18-month-old son ate half of a chicken breast. If that isn't a ringing endorsement, I don't know what is! :) So make sure you try these simple dinner recipes, you will not be disappointed!
